OATMEAL CREAM PIE CUPCAKES

I featuring your cupcake this afternoon, I’ve dreamed about them ALL week! Oatmeal Cream Pies where my absolute favorite after school snack and I always had one before my basketball games too!! Thanks for sharing this amazing cupcake with us!


This Oatmeal Cream Pie Cupcake starts with a spice mix cake mix with some added brown sugar, cinnamon and nutmeg. The frosting is a creamy marshmallow-cinnamon frosting with some Little Debbie Oatmeal Cream Pies mixed into the frosting.

INGREDIENTS

FOR THE CUPCAKE:
  • 3 Large eggs
  • 1 Box Spice Cake Mix
  • 1/2 C Vegetable oil
  • 1/2 tsp Nutmeg
  • 3/4 C Buttermilk
  • 3/4 C Sour Cream
  • 2 tsp Cinnamon
  • 2 tbsp Light brown sugar
  • 1 tsp Pure vanilla extract
FOR THE FROSTING:
  • 1 7oz Jar Marshmallow fluff
  • 2 tbsp Heavy whipping cream
  • 4–5 C Powdered sugar
  • 1 1/2 C Unsalted butter at room temperature
  • 2 tsp Pure vanilla extract
  • 2 tsp Cinnamon
  • 7 Oatmeal Cream Pies
  • Pinch on salt
