Pumpkin Snickerdoodles

Wonderful recipe. Consistency is perfect. They stay soft and chewy when cool. I didn’t use parchment paper, just my shiny stainless steel cookie sheets, and they came off just fine. Definitely a keeper.


Easy and Irresistible pumpkin Snickerdoodles

INGREDIENTS

  • 3 1/4 cups all-purpose flour
  • 3 1/2 tsp cornstarch
  • 1 tsp cream of tartar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 + 1/8 tsp salt
  • 1 1/2 tsp ground cinnamon*
  • 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg*
  • 1/4 tsp ground allspice
  • 1 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 1 cup unsalted butter , softened
  • 1 large egg yolk
  • 3/4 cup canned pumpkin puree
  • 1 1/2 tsp vanilla extract

For rolling

  • 1/4 cup granulated sugar
  • 1 1/2 tsp ground cinnamon
