SWEET CARROT CAKE MUFFINS WITH CHEESECAKE FILLING
These looks awesome. I was going thru the recipe, and was curious about the streusel topping.
Delicious breakfast, snacks or dessert, these moist Carrot Cake Muffins have smooth cream cheese filling inside and crunchy cinnamon streusel on top, I can’t decide which is my favorite part.

INGREDIENTS
For Carrot Cake Muffins:
- 2 1/4 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar (firmly packed)
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1 1/2 teaspoons ground cinnamon
- 3/4 teaspoon ground ginger
- 3/4 teaspoon salt
- 2 large eggs
- 3/4 cup water
- 1/3 cup vegetable oil
- 1 cup grated carrots (about 2–3 medium carrots)
- For cream cheese filling:
- 10 ounce cream cheese-softened
- 1/4 cup+1 Tablespoon sugar
- 1/2 teaspoon vanilla
For Streusel Topping:
- 1 cup all-purpose flour
- 2/3 cup granulated sugar
- 1 /2 cup unsalted butter-melted
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- For the Glaze:
- 1 Teaspoon milk
- 1/4 cup powdered sugar
