Delicious Cheesecake with white chocolate and raspberries

INGREDIENTS
- 300 g shortbread
- 100 g of butter, melted
- 300 ml of cream
- 100 g white chocolate
- 350 g of fresh cheese
- 2 bags of vanilla sugar
- 150 g raspberries
- powdered sugar
INSTRUCTIONS
- Mix the shortbread fine in a blender. Stir the melted butter into 250 g of crumbled cookies.
- Cover the bottom of 4 small springforms with baking paper. Spread the cookie mixture over it, press with the convex side of a spoon and cool.
- Melt the white chocolate au bain marie. Beat the cream and fresh cheese together. Add the vanilla sugar and stir well. Fold the melted chocolate into the cheese mixture.
- Fill the molds with the cheese mixture and put them in the fridge for at least 2 hours. Finish them just before serving with the remaining cookie crumbs, raspberries and some powdered sugar.
